ABOUT THE FARMER

At the age of 12 (in 1945), the young visionary Aquilino moved to the department of Caldas, where he spent more than 10 years learning the techniques of coffee growing. He invested the money he earned back into coffee when he returned to his village.  He bought part of his current farm from his parents. Aquilino established 6 coffee fields and became a role model and leader in coffee farming in the wider area.

Aquilino is one of the more conservative farmers in our collaboration so far. We enjoy the place where the farm is located. The Boyacá area has incredibly fertile soil that has huge potential for growing speciality coffee.

ABOUT THE FARM

Finca “La Quinta” has more than 70 years of tradition in coffee growing. In addition to growing specialty coffees, the family has been growing flowers for several years, mainly orchids and succulents. Last but not least, Aquilino seeks to ensure fair treatment of all those involved in coffee production and the ecological sustainability of the farm.

Our first collaboration started with one lot of a blend of colombia and castillo varieties, which Aquilino processed using the classic washed method. After harvesting, the ripe cherries were thoroughly sorted and fermented for 48 hours with regular stirring every 8 hours. The coffee was then washed and sun-dried in parabolic dryers for 15 days.
